cut ca. 100g butter into cubes, mix them with 150g white flour and ca. 150g yellow cheese (e.g. Norvegia) by hand until they become like bread crumbs, then add in 1 egg yolk, keep mixing to make it into a solid dough
optional spices: as desired, you can add in extra spices like rose-mary, thymian… put them in at the beginning with the flour
wrap the dough with plastic and let it rest in the fridge for 30min
on a slightly floured working surface, roll the dough into a thin layer, cut out shapes as you want (here I made them stars), collect the rest of the dough, roll it out again, repeat the steps above to use all the dough
put the cut out cookies onto a oven plate with baking paper, brush the top of the cookies with egg white, if you want, you can also drizzle some sesame on top
bake the cookies in 200C preheated oven for ca. 20min until the cookies are lightly golden
put them on a rack after taking them out, so that they can breath and cold down
you can serve them once they are cold, but personally I think they taste much better a couple days after baking
