Mayonnaise/Aioli

For ca. 500ml Mayonnaise:

have 2 egg yolks in a mixing bowl, add in 1ts of mustard, mix for ca. 30 seconds.

add in small amount of oil very slowly while stirring the yolks with a normal whisk, stir well so that the yolks and oil combine nicely together (Important: at the beginning it’s crucial to add in oil very slowly while stirring, otherwise the yolks and oil might stay separate)

when the mixture gets a thick consistent texture add in more oil gradually, stir constantly (you can add up to 500ml of mix oil like olive oil, rapeseed oil… if you like the taste of sesame oil, it gives the mayonnaise more character)

add in 1ts of white wine vinegar and up to 1/2 lemon juice, mix well, add salt to taste, sugar can be optional, you can also add in 1-2 minced garlic cloves to make aioli
