Tarte Flambée (Flamme Kuchen) ft. Goat Cheese

For 2-3 people

mix 200g flour (150g white and 50g wholegrain) with 5g yeast and 5g salt, add in 150ml finger warm water, knead well into a dough, set it aside in a warm spot to grow

mix 150ml crème fraiche with 1tbs of minced fresh parsley, a pinch of nutmeg, salt and pepper to taste and 1/2 ts of sugar, set aside

start a frying pan with oil and minced garlic, throw in 100g bacon cubes and fry until they look slightly golden, add in minced 1/2 onion and fry util they become soft, set aside

have 200g cherry to cut into halves, grill them in the frying pan until they are soft, spice them with some salt and pepper, set aside

take the dough out and roll the base as thin as possible, put the base onto a oven plate with baking paper, cover the base with crème fraiche mix, top it with bacon and onion, then put on desired amount of thin goat cheese slices

bake the tarte in 250C preheated oven for around 20min (until the topping becomes crisp or the cheese is goldenly grilled)

toss some salad leaves with olive oil, lemon juice, salt and pepper

sprinkle tomatoes and salad on the tarte before serving

optional ingredient: possible to use other cheeses, i.e. parmesan, put on shaved parmasan at the end with tomatoes and salad
